Mac Attacks

I always love to bake a goodie for any and every occasion possible. Cookies, pies, cakes, you name it, I've tried it. While I do love to make the traditional party favorites, I have begun to branch out into hybrid inventions. Recently while surfing around on pinterest, I came across a photo for a treat that combined cookie dough, Reese's peanut butter cups, and brownie mix-- what could be better?! In an effort to spice things up, I decided to give it a try! We didn't know what to name the creation, so my fam chose the "Mac Attack."

Mac Attacks

Ingredients:
  • Cookie dough (I used pre-made, pre-sliced)
  • Brownie Mix (mixed according to package)
  • Oreos
  • Reese's Peanut Butter Cups

Directions:
  1. Pre-heat oven to 350.
  2. Grease a muffin tin with cooking spray.
  3. Put two pre-sliced cookie squares into each muffin tin.
  4. Put an Oreo or Reese's Peanut Butter Cup on top of cookie dough.
  5. Put brownie mix on top.
  6. Bake at 350 for approximately 23 minutes.
  7. Serve alone or top with vanilla ice cream!

Shark Week Goodness

It's not every week that shark week comes around! Shark week has been a staple in our house every year for quite some time now. In preparation for the big night, I'm cooking up a feast! Beef with broccoli and chicken pad thai...

Beef with Broccoli
*Recipe adapted from www.allrecipes.com 


Ingredients:
    1 lb. beef top round steak
    1 tablespoon canola oil
    1 can Campbell's® Condensed Tomato Soup
    3 tablespoons teriyaki
    1 tablespoon vinegar
    1 teaspoon garlic powder
    1/4 teaspoon crushed red pepper
    3 cups fresh or frozen broccoli

Directions:
  1. Slice beef into thin strips.
  2. Heat oil in skillet. Add beef and stir-fry until browned and juices evaporate. 
  3.  Add soup, soy, vinegar, garlic powder and pepper. Heat to a boil. Add broccoli and cook until done.


Chicken Pad Thai

Ingredients:
8 ounces rice-stick noodles
1/4 cup chile sauce
1/4 cup lime juice
3 tablespoons soy sauce
2 tablespoons light brown sugar
4 tablespoons canola oil
3 tablespoons minced garlic
1 lb ground chicken
3 cups bean sprouts
8 scallions, chopped
2 eggs, beaten

Directions:
  1. Boil water. Stir in noodles and let cook for 3 minutes. Drain immediately and rinse under cold water.
  2. Whisk together chile sauce, lime juice, soy sauce, brown sugar in a small bowl. 
  3. Heat garlic in oil over medium heat. Then add chicken to cook.
  4. Add remaining oil and chile sauce. Mix. 
  5. Add bean sprouts, scallions, and egg. Mix to coat. Then let cook about 2 minutes.
  6. Add garnish.
